Blueberry Zucchini Banana Bread

Too many zucchini and over ripe bananas in the kitchen pushed me into creating a new bread.  I tried adding as much zucchini as I possibly could without ruining it.  I'm happy to say that the three cups of zucchini produced a wonderfully moist bread that will now become a summer favorite. Eating this bread with bananas, zucchini, blueberries, walnuts and whole wheat flour is sure to make you feel healthier too.  

Blueberry Zucchini Banana Bread
1 cup sugar
1/2 cup brown sugar
1/2 cup butter, melted
2 eggs, slightly beaten
2 overripe bananas
3 cups zucchini, grated
2 cups whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1-1/2 teaspoons ginger
1/4 teaspoon nutmeg
1/2 cup walnuts, chopped
1 cup blueberries

Preheat oven to 350 F. Prepare a 13x9 pan with non-stick spray. In a mixing bowl, beat sugars, butter and eggs. Add banana and mix well. Stir in zucchini. Add dry ingredients (flour, soda, salt, cinnamon, ginger and nutmeg). Fold in nuts. Place batter in pan. Sprinkle blueberries on top of batter and lightly press blueberries. Bake for 45 minutes.
