White Chocolate Coconut Cookies
(Printable Recipe)
1/2 cup butter, softened
1/2 cup vegetable oil
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups regular oats
1 cup white chocolate chips
1 cup chopped pecans
1 cup flaked coconut
Preheat oven to 350 degrees. Cream butter, oil and sugars in mixer. Add eggs and vanilla and mix well. Combine flour, baking powder, baking soda, and salt and add to creamed butter mixture. Mix until combined. Add oats, white chocolate chips, pecans, and coconut. Drop by tablespoonfuls onto a cookie sheet. Bake 12 minutes. Cool.
