Spinach Tortellini Soup


My children love tortellini and ravioli.  This tortellini soup is one way I try to get some veggies in their bodies.  This soup is definitely a comfort food.  Serve with your favorite bread and salad for an easy meal.


Spinach Tortellini Soup
(printable recipe)
1 tablespoon olive oil
1 small onion, chopped
1 teaspoon minced garlic
1 quart vegetable broth
6 oz. fresh spinach leaves, roughly chopped
1-15 ounce can diced tomatoes
1 - 15 ounce can fire roasted tomatoes
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon red pepper flakes
1 package frozen cheese tortellini
Parmesan cheese for topping


In large stock pot, heat olive oil.  Add onion and garlic and cook 2 minutes.  Add broth and spinach leaves to pot and simmer for 10 minutes.  In food processor, pulse fire roasted tomatoes until pureed.  Add pureed tomatoes, diced tomatoes, basil, oregano and red pepper flakes to soup.  Over medium heat, add tortellini and cook 10 -15 minutes or until tortellini are tender.  
Top with Parmesan cheese.
